Diversification of the region in G.A.D.L. Comarca de Antequera
More than 2,500 herds of goats (the highest concentration of goats in Europe) are concentrated in the province of Malaga. Therefore, the goat industry is one of the most important rural Malaga, facilitating the fixing of the rural population in the interior of the province. And caprine livestock has an important environmental role: is landscape generator and allows the use of marginal areas and crops remains.
However, the goatmeat sector in Málaga has serious difficulties in marketing their products. The processing and marketing of products derived from the Malagueña goat, milk and meat, is almost 90% outside of the province of Malaga, with what the value added generated does not participate in economic growth in the province.
Part of kid and milk, kept for farming purposes, due to the renovation of livestock, meat production replaces adult and consequently less productive by other younger animals thus optimizing yields of the holding. These goats destined for the beef market have a value of between 6 and 12 euros per animal, being practically symbolic price for the farmer, who brings very little benefits. Therefore, and in order to increase the price in the rural environment, proposed a study for the transformation of that meat in other products that can derive more value on the market, thus improving the economic performance of herds in our region.
Therefore we intend to increase the value of our products to impact directly on our farms and other areas dependent on our environment.
Thus, we propose the transformation of our materials in:
- Goat salami: goat meat has a flavor characteristic and highly appreciated in different areas, both in our country, as outside our borders. This flesh confers on the salchichón aroma and taste that make it a unique product.
- Goat sausage: due to the low fat meat goat content, makes the product more lightweight and easy to digest, with a flavour of our land.
- Pate of goat: we can say that the ingredients used for the manufacture of the pate are the highest quality coming from young animals or other covered products of our land, some of them, by certified guarantees.
